Delicious Pumpkin Pie Overnight Oats (That’s healthy ?)

To tell you the truth, I’m pretty disappointed in myself right now ? Thanks giving hasn’t even hit yet. Not even Halloween! And… I’ve gained ten pounds in the last month ?

For some odd reason, at this time of year I love Pumpkin Spiced everything ? But seriously, I keep trying to justify my desire to have every form of pumpkin spiced latte, Frappuccino and of course pie, by summing it up to: it’s a vegetable after all!

No more excuses! I need to save myself before I end the year with twenty extra pounds. Today I really wanted to buy a pumpkin pie from the grocery store. Then it hit me! Like a pumpkin falling from the sky!

My four year is going through yet another growth spurt. So every thing she eats seems to run right through her. She’ll go on repeat for hours with; “mommy I hungry!”

So I finally decided that Everytime she’s still hungry after a meal, she’s getting oats. And of course the yummiest method of oats is overnight oats.

It’s literally yogurt and oats in a bowl in the fridge overnight; it turns into the yummiest goop you’ll ever have! Much better than traditionally made oatmeal.

So of course my idea was to turn these overnight oats into a form of a pumpkin spiced dish! It just makes sense! The ingredients I got were a complete no-brainer for the perfect recipe that’s still very healthy and hearty.

I literally just threw everything in a bowl test tasting as I went. It took all of three minutes to do. And I know it’s meant to sit overnight buuut impatience runs in the family. We all dug in while the oats were still a tad firm.

My goodness, it tasted just like pumpkin pie!!! But even better because there was no side of guilt! Each bite was still that light and airy texture with it’s combination of flavorful spices. That Greek yogurt truly hit it out of the park. It was the perfect addition.

It took half a cup for my daughter to announce that she was full! She never says that. One bowl had me ready to pop! But it wasn’t a sluggish type of full I usually would get from pumpkin pie. But an energized and refueled type of full.
