Peanut Butter and Jelly French Toast

What kid doesn’t love PB&Js or french toast? These childhood classics are some of my favorite food memories, so it’s beyond me why I’ve never thought to combine these scrumptious meals. Not only was it super easy to make, as in easy like you don’t need a recipe easy, but they were also insanely delicious.

I don’t think I need to describe the flavors that will explode after taking a bite of a peanut butter and jelly filled sandwich dipped in egg batter and fried, but I will just in case I haven’t yet convinced you to make this for breakfast as soon as possible. Who am I kidding, it doesn’t need to be for breakfast, try it our for dinner too. I always remember loving breakfast served for dinner.

So back to describing this breakfast recipe to beat all breakfast recipes. Just imagine how delicious classic french toast is, but then when you take a bite, warm peanut butter and a touch of sweet jam…or honey or bananas explodes. Is it dessert? Is it breakfast? Is it a new staple recipe? Yes is the answer.

Now for the health benefits. Even though you might think this dessert like breakfast might not be that healthy, you’re wrong. Make sure to look for a healthy whole grain organic bread. The second trick is to use a lot of eggs. I see recipes that serves 6 and will only use one egg and a lot of milk in the batter, but in my opinion it’s better to make the batter out of just eggs (no milk) and really let the bread soak up the egg. This way you are getting a full serving of protein with each meal. Eggs are a great source of healthy protein and fat. They are easily absorbed and easy for kids to eat. The addition of peanut butter or almond butter is another great source of protein and fats. I used a homemade jelly from a recipe in our cookbook “Real Food By Two Moms” so the sugar content is low and it also contains chia seeds for an extra dose of nutrients. With all of this flavor, we skipped the maple syrup and no one even noticed.

I can’t believe in my 40 years, yep I said it…where does the time go, I’ve never thought to combine French Toast with Peanut Butter and Jelly. What else have I been overlooking? Please tell me if there are any other amazing combos that make angels sing.

Peanut Butter and Jelly French Toast

When two favorite breakfast recipes collide, you get Peanut Butter and French Toast and a happy family.

Ingredients

  • 8 whole grain slices of bread

  • 4 tbsp nut butter (1 tbsp for each sandwich)

  • 4 tsp jelly or honey (1 tsp for each sandwich)

  • 4 eggs, beaten

  • 1 tsp vanilla extract or powder

  • pinch of salt

  • 1 tbsp butter for frying

Directions

  • Spread peanut butter on 4 pieces of bread. Spread jelly on the other 4 pieces of bread and squish them together to make a peanut butter and jelly sandwich. Make sure they are stuck together well before soaking them in the egg batter.
  • Beat eggs, vanilla and salt together in a casserole dish. This way you can soak all 4 sandwiches at the same time. If you rather do 1 at a time in a bowl that’s fine too.
  • Soak sandwiches very well, flipping them over several times to make sure that the egg mixture is soaked up. Soaking time will vary depending on what type of bread you use. Tough sourdoughs tend to take longer than soft squishy breads. So just make sure to take them out before the bread begins to fall apart.
  • Heat the butter in a skillet or griddle and fry the sandwiches until golden brown and flip and continue to fry until golden.
  • Remove from the skillet and let sit for a minute, then cut into sticks.
